Oven-fried Coconut Chicken

INGREDIENTS

1 1/2 c Flaked coconut, loosely
packed
1 c Seasoned breadcrumbs
1/4 c Unsalted butter, melted
2 Eggs, beaten until foamy
3 lb Chicken pieces

INSTRUCTIONS

Prep: 10 min, Cook: 50 min.  Preheat oven to 350øF. Combine coconut
and breadcrumbs in a shallow  dish. Season with salt and pepper to
taste. Pour melted butter into a  baking pan. Dip chicken in egg, one
piece at a time, then roll in  coconut mixture. Arrange chicken skin
side down in pan. Bake 25  minutes. Turn chicken, and bake another 25
minutes, until cooked  through and golden.  Posted to recipelu-digest
