INGREDIENTS

750 g Fresh spinach or 250g; (8oz) frozen chopped
; spinach (1 1/2lb)
2 Spring onions; chopped coarsely
15 g Butter; ( 1/2oz)
1/2 ts Salt
1 tb Dijon mustard

INSTRUCTIONS

If using fresh spinach, trim, rinse, shred and cook in a covered saucepan
with the minimum of water for 1-3 minutes, until tender.
Cook frozen spinach according to the packet instructions.
Tip the spinach into a colander and drain thoroughly, pressing the green
with the back of a spoon to get rid of the excess moisture.
Put the spinach, spring onions, butter, salt and mustard in a food
processor or blender and pure. until smooth.
Return to a saucepan and heat through, stirring.
Serve hot.
