Pan Fried Bay Scallops

INGREDIENTS

2/3 c Seasoned breadcrumbs
1/4 ts Garlic salt
1/4 ts Cayenne pepper
1 1/4 lb Bay scallops
1 tb Plus 1 tsp. oil
3/4 Lemon; cut in wedges

INSTRUCTIONS

Prep: 5 min, Cook: 5 min.
Combine first 3 ingredients in a shallow dish. Dredge scallops to coat.
Heat oil in a heavy nonstick skillet over medium heat. Cook scallops 3-4
minutes per side until scallops are opaque throughout. Serve with lemon
wedges.
