Panfried Halloumi With Olive Oil Croutons And A Caper And

INGREDIENTS

1 Halloumi Cheese
1 Tomato, sliced
6 Olives, pitted and chopped
50 g Capers
1 Shallot, chopped
1 Lime, juice
Olive Bread
1 T Vinegar
4 T Olive Oil, to panfry

2 t Mustard
8 Sprigs Chopped Basil
50 g Mixed Salad Leaves

INSTRUCTIONS

Mix the mustard, oil, vinegar, capers, olives and lime juice in a  bowl
and season. Next add the chopped basil. Pan fry the bread in  plenty of
olive oil until golden. Drain on paper. Fry the cheese on a  high heat
until golden. Season the tomatoes and place on top of the  bread with
the chopped basil. Place the cheese on the top and  sprinkle over
vinaigrette. Serve with dressed salad leaves.  Converted by MC_Buster.
