Pappardelle with Olive Paste and Gruyere

INGREDIENTS

225 g Dried pappardelle (or other flat noodles)
1 tb Olive oil
4 tb Black olive paste
1 tb Pine nuts
75 g Gruyere or Swiss cheese, grated on the fine side of the grater

INSTRUCTIONS

Preheat oven to 200 C/400 F/Gas 6.
Cook the pasta for 6 min in boiling salted water. Drain. Pour the oil into
a medium gratin dish and add the drained noodles. Toss the noodles in the
olive oil and the olive paste. Cover with pine nuts and the grated cheese.
Bake for 15-20 min until the cheese has turned crispy and golden. The pasta
on top is slightly crisp as well, underneath it is moist and fragrant.
