INGREDIENTS

8 Squares semi-sweet chocolate, Baker's
1/2 c Butter
1 c Sugar
7 Eggs; separated,
1 pt Heavy cream
Whipping cream; vanilla and sugar for garnish

INSTRUCTIONS

This is a dense chocolate cake with a creamy chocolate mousse-like layer
under whipped cream...very good!!!
Melt 7 squares chocolate and butter in a saucepan over low heat. Add 3/4
cup sugar & egg yolks. Beat for 3 minutes at high speed. Preheat oven to
325 degrees. In a separate bowl beat egg whites until soft peaks form. Add
remaining 1/4 cup sugar gradually, beatijng constantly ujntil whites hold
their peaks. Fold egg whites slowly into choc. batter with spatula. Pour
3/4 of batter into ungreased 9" springform pan. Bake at 325 degrees for 35
minutes. Let torte cool and fall. Run knife around edge and pour remaining
uncooked batter on top and chill. Whip heavy cream with 1 tsp vanilla and 2
tsps sugar or to taste until it has a thick whipped cream consistency.
Spread or use pastry bag with star tip on top of cake and use remaining
choc. square to decorate with shavings. (use veggie peeler) Refrigerate
