Parris Peanut Brittle

INGREDIENTS

2 c Sugar
1 c Light corn syrup
1/2 c Water
1/2 ts Salt
3 c Peanuts; raw, shelled, skins off if possible
2 tb Butter
2 ts Baking soda

INSTRUCTIONS

In a large, heavy saucepan heat the water, syrup, sugar and salt to
boiling. Add peanuts, reduce heat to medium, and, stirring constantly, cook
to hard-crack stage (293-300 F). Add butter, remove from heat and add
baking soda. At this point the mixture will foam up considerably, so be
careful. Stirring rapidly, pour onto a non-stick baking sheet (or a marble
slab), spreading to 1/4 inch thickness. When cool, break in to pieces;
store in an air-tight container. Entered 14 DEC 94 NOTES
: This is very similar to the peanut brittle made by Billie Bob Murphey's
mother, Money Jones.
