Parsley And Potato Soup

INGREDIENTS

1 Onion, chopped
1 t Olive oil
2 c Chopped potatoes
1 c Sliced leeks, white only
4 c Stock
1 t Salt
1/4 t White pepper
2 T Chopped fresh chives
1/4 c Chopped fresh parsley

INSTRUCTIONS

In a large pot, combine all the ingredients except the salt, pepper,
chives & parsley.  Cover the pot & bring to a boil. Lower heat &
simmer for 30 minutes.  Cool slightly, then puree. Season with salt &
