Pasta With Grilled Vegetables

INGREDIENTS

8 oz Spaghetti, uncooked
3 T Olive oil, divided
1 Garlic clove, minced
2 Zucchini, cut in 1/4"
Slices
1 Red bell pepper, seed &
Cut in 1/2"
1/4 lb Mushroom, sliced
3 T Fresh basil, chopped
1 T Lemon juice
2 t Lemon peel, grated
1/2 T Salt
1/4 t Black pepper

INSTRUCTIONS

Heat grill or broiler.  Meanwhile, cook spaghetti in boiling salted
water according to package directions until just tender.  In a cup  mix
1 Tbs oil and the garlic.  Arrange vegetables on a grill grid or
broiler rack. Brush vegetables with oil mixture and cook until  tender;
turning once, 6 to 8 minutes.  Place in a large bowl.  Add  remaining 2
Tbs oil, the chopped basil, lemon juice, lemon peel, salt  and pepper.
Drain spaghetti and add to vegetables in bowl.  Toss to  combine.
Garnish with basil and serve with cheese.  Recipe By     : First 8/1/94
