Pasta with Ham and Peas

INGREDIENTS

1 1/2 Cp ham, diced, about
1 Cp frozen peas, about
1 Onion, chopped
1 tb Butter
3/4 c Milk
3/4 Cp cheese, coarsely grated, about, any Italian cheese which melts well,parmesan, asiago, romano, or a mixture of these
1 Handful chopped parsley
1 Splash white wine
Hot pepper flakes
Ground black pepper to taste
1 Sprinkle of salt

INSTRUCTIONS

Saute onion in butter, add ham to heat through and brown a bit. Add peas
and heat through, add hot pepper flakes, pepper, handful chopped parsley,
simmer about 5 minutes, add a splash of white wine if you like.
In another pot heat milk, add cheese and simmer together, when hot but not
boiled toss the hot drained pasta in this sauce.
Toss again with the ham and pea mixture. Sprinke with a little more
parmesan and parsley. Serve.
A really tart sauvignon Blanc or Pinot Grigio goes well with this pasta.
