Pastel Coconut Ice Cream Balls

INGREDIENTS

3 c Flaked coconut
Red, blue, green and yellow food coloring
1/2 ga (8 cups) vanilla ice cream

INSTRUCTIONS

Line large cookie sheet with waxed paper.  Place 3/4 cup of the coconut in
each of 4 plastic bags.
Add 2 to 3 drops red, blue, green or yellow food coloring and 2 to 3 drops
water to each bag; close bag.  Shake coconut until desired color is
reached.  Using 1/2 cup ice cream scoop, shape ice cream into 16 balls.
Place on paper-lined cookie sheet; freeze until firm.
Empty each bag of tinted coconut onto a separate sheet of waxed paper.
Remove ice cream balls from freezer. Working quickly, roll each ball in
desired color of coconut; return to cookie sheet.  Freeze until firm. Yield
