Pea Soup With Coriander

INGREDIENTS

2 T Oil
1 Onion, finely chopped
1 Clove garlic, finely chopped
1 t Ground coriander
1 Vegetable stock cube
600 Water, 1 pint
400 g Frozen peas, 13oz
Salt and freshly ground
black pepper
1 142 ml carto single cream
2 T Fresh coriander, finely
chopped

INSTRUCTIONS

Heat the oil, cook onion and garlic until soft. Add the ground
coriander and cook for 1 minute.  Dissolve the stock cube in 600ml
(1pint) boiling water and add to the  pan with the peas and cook gently
for 15 minutes.  Liquidise until a smooth puree. Season.  Stir in
single cream and fresh coriander just before serving.  Converted by
