Pea Soup with Coriander

INGREDIENTS

2 tb Oil
1 Onion; finely chopped
1 Clove garlic; finely chopped
1 ts Ground coriander
1 Vegetable stock cube
600 ml Water; (1 pint)
400 g Frozen peas; (13oz)
Salt and freshly ground black pepper
1 142 ml carto single cream
2 tb Fresh coriander; finely chopped

INSTRUCTIONS

Heat the oil, cook onion and garlic until soft. Add the ground coriander
and cook for 1 minute.
Dissolve the stock cube in 600ml (1pint) boiling water and add to the pan
with the peas and cook gently for 15 minutes.
Liquidise until a smooth puree. Season.
Stir in single cream and fresh coriander just before serving.
