Peach Cobbler (from Mrs Looney)

INGREDIENTS

2 c Diced peaches
2/3 c Sugar, less for canned
1 c Flour
3/4 c Sugar
1 t Baking powder
1/2 c Milk
2 T Butter, melted

INSTRUCTIONS

Mix together the peaches and sugar. Heat slowly (in a saucepan or
microwave) until the sugar is melted. Make sure the peaches are quite
juicy, if not, add a bit of water; set aside  For the batter. Mix dry
ingredients; add milk then butter. Mix till  dry ingredients are
moistened. Pour into a greased 8X8" (2 inches  deep) pan. Pour peaches
and juice on top.  Bake for 40 minutes at 350, till lightly brown and
juice is absorbed.  If you double this recipe you can bake it in a 13
by 9 inch pan for  about the same time. Posted to MC-Recipe Digest V1
