Peach Cobbler/grandpa’s

INGREDIENTS

4 c Peaches; fresh or frozen
1 c Sugar
3 3/4 c Flour
2 tb Melted butter
1/4 ts Salt
1/4 c Shortening
2 tb Water

INSTRUCTIONS

Preheat oven to 400 deg F.  Put peaches in bottom of an 8 x 8 pan. Bake in
oven until peaches start to simmer. Mix together the sugar and the 3 T of
flour and sprinkle over the peaches. Add melted butter.
Put remaining flour into a bowl; add salt and shortening and work with
fingertips until mixture resembles coarse oatmeal. Mix in water to form a
stiff sough. Roll out dough on lightly floured board into a square large
enough to fit over the peaches.
Prick pastry with fork and bake for 35-40 minutes.
