INGREDIENTS

30 Graham cracker squares; (15 whole graham crackers)
1/3 c Granulated sugar
1/2 c Granulated sugar
1/2 c Sliced almonds
6 tb Unsalted butter; (3/4 stick), melted
12 oz Cream cheese; at room temperature
2 Eggs
1 ts Vanilla
2 tb Cold unsalted butter; cut into pieces
1/4 c Packed light-brown sugar
1/2 c Sliced almonds
2 tb All-purpose flour
1 Jar; (13 ounces) peach preserves

1. Heat oven to 350 degrees F. Coat a 13x9x2-inch baking pan with nonstick
cooking spray.
2. Combine graham crackers, 1/3 cup granulated sugar and almonds in a food
processor or blender. Process until well combined. Pour in melted butter.
Process until crumbs hold together. Press over bottom of prepared pan.
3. Bake in heated 350 degree oven 10 minutes or until lightly covered.
4. Meanwhile, beat together cream cheese and 1/2 cup granulated sugar in a
large bowl until smooth. Add eggs, one at a time, beating well after each
attention. Beat in vanilla.
5. Remove crust from oven. Pour in cream cheese mixture; spread evenly.
Return to oven. Bake 15 minutes or until slightly puffed. Leave oven on.
6. Prepare topping: Crumble together cold butter, brown sugar, sliced
almonds and flour in a bowl.
7. Remove pan from oven. Stir preserves to break up clumps. Gently spread
peach preserves over top of cream cheese filling. Sprinkle with topping.
Bake another 15 minutes or until hot and bubbly. Cool completely in pan on
a wire rack. For firmer bars, chill in refrigerator. Cut into bars.
