Peanut-Butter Mocha Whip

INGREDIENTS

8 Ladyfingers; split lengthwise
1 c Whipping cream
1 ts Instant espresso coffee
1/2 ts Vanilla extract
3/4 c Part-skim ricotta cheese
3 tb Sugar
2 tb Cocoa
2 tb Mini peanut-butter morsels
1 Banana; thinly sliced
Additional whipped cream

INSTRUCTIONS

In dessert dishes, line with ladyfingers. Set aside. In food processor,
combine cream, instant coffee, vanilla, ricotta cheese, sugar and cocoa.
Blend until smooth. Stir in peanut butter morsels. On ladyfingers in
dessert dishes, spoon over ricotta mixture. On ricotta mix, lay sliced
banana, (just a few slices). Top bananas with additional whipped cream.
Place in refrigerator or freezer to chill.
Approximately 7 minutes
Per serving (excluding unknown items): 1320 Calories; 104g Fat (69%
calories from fat); 29g Protein; 77g Carbohydrate; 383mg Cholesterol;
323 mg Sodium
