Peanut Sauce

INGREDIENTS

2 tb Peanut oil
1/2 c Onion; finely chopped
2 Cloves garlic; minced
1 tb Crushed red pepper flakes; can be less
1 ts Ground cumin
3 tb Lime juice
1/4 c Soy sauce
1 c Peanut butter; (smooth or chunky)
1/3 c Unsweetend coconut milk; *optional

INSTRUCTIONS

1. In a small heavy saucepan, heat oil on side of grill away from direct
heat. (Can be done on stove inside.) Add onion, garlic, hot pepper flakes,
and cumin. Cook until onion and garlic are fragrant, but not brown, about
10    minutes.
2. Stir in lime juice and soy sauce. Gradually stir in peanut butter and
then coconut milk until smooth. Cook, stirring, until hot, about 5 minutes.
