Peanut Sauce And Satay Marinade

INGREDIENTS

1 tb Minced garlic
4 ts Thai fish sauce
1 ts Sugar
1/2 ts Salt
1/4 c Peanut oil
Freshly ground black pepper; to taste
1 lb Beef; pork, chicken, sea
; scallops or shrimp
Peanut sauce; see recipe

INSTRUCTIONS

1. Whisk all ingredients together in a bowl. Cut the meat or pieces of
seafood into 2-1/2 inch long by 1 inch wide strips. Add the strips of meat
or pieces of seafood, toss well, and let marinate for at least 30 minutes
before grilling or boiling. Place on tips of skewers and grill or broil, 1
minute each side.
2. One of my fondest memories as a school girl in Southeast Asia was to
snack on French bread with a little salted butter, and sprinkled with
ground toasted peanuts, and granulated sugar. Back then I didn't even know
there was such a thing as peanut but ter, but my own concoction came pretty
close to it.
