INGREDIENTS

1 1/3 c Flour; plus extra flour
For dredging
1 ts Baking powder
1/4 ts Salt
1 c Milk
3 Eggs
1/4 c Maple syrup
2 tb Melted butter
1 ts Lemon juice
4 lg Ripe pears
Vegetable oil; for frying
Confectioners' sugar
1 pt Creme fraiche

INSTRUCTIONS

Heat oil in fryer to 350 degrees. In a bowl combine 1 1/3 cups flour with
baking powder and salt. In a separate bowl, combine milk, eggs, maple
syrup, butter and lemon juice. Whisk liquid into flour. Refrigerate mixture
for 30 minutes. Peel pears and cut into wedges. Dredge pear wedges in
flour. Dip floured wedge into batter and add to heated oil. Fry for 3 to 4
minutes, until fritter is browned and crisp. Keep fritters warm as others
fry. Sprinkle fritters with confectioners' sugar and serve with creme
fraiche. This recipe yields 6 to 8 servings.
