Pears with Caciotta, Hazelnuts And Warm Chestnut Honey

INGREDIENTS

8 oz Chestnut honey or honey of your choice
4 Perfectly ripe comice pears; or the pear
Your choice
8 oz Caciotta di Sienna or another semi-soft
Sheep's milk cheese from Tuscany
20 Whole Hazelnuts; peeled

INSTRUCTIONS

In a small sauce pan over low heat, gently warm the chestnut honey. Peel,
core and quarter pears, remove seeds and strands. Divide pears in the
center of 4 individual plates and randomly shave shards of caciotta over
the pears. Place 5 hazelnuts on each plate. Using a tablespoon, randomly
drizzle the warm honey over each plate. Serve immediately. This recipe
yields 4 dessert or cheese course servings.
