INGREDIENTS

2 tb Butter
1 c Diced onion
1 1/2 ts Grated lemon zest
2 pk (10-oz) frozen tiny peas,, thawed
Salt,, to taste
Pepper,, to taste
1 tb Chopped fresh mint

INSTRUCTIONS

In a medium saucepan, melt butter over low heat. Add onion and lemon zest.
Cook gently, stirring occasionally, until onion is soft but not browned,
about 4 minutes. Add peas, and stir to combine thoroughly. Season with salt
and pepper. Cook, stirring, about 5 minutes or until peas are heated
