Raspberry Mint Honey

INGREDIENTS

4 c Mild-flavored honey, such as clover or orange blossom
2 c Frozen raspberries
1/4 lb (4 ounces) fresh mint leaves

INSTRUCTIONS

This recipe can be doubled or tripled. Use a large pan, since the honey
expands dramatically while simmering.
In a 3- to 4-quart pan, combine all ingredients over medium-high heat. Stir
occasionally until honey simmers, about 5 minutes. Simmer 20 minutes,
remove from heat and pour through a fine strainer; discard raspberry pulp
and mint leaves. Let flavored honey stand until completely cool; pour into
clean decorative jars. Store at room temperature up to 1 month.
