INGREDIENTS

500 g Side of fresh undyed smoked
haddock
3 Limes, juice of
1 Red chilli, seeded and
finely
chopped
2 T Shallots, finely chopped
50 Dark rum
A peppermill filled with
black
peppercorns

INSTRUCTIONS

Trim haddock and remove the skin. Slice thinly at an angle and lay  out
on a serving dish and cover with the remaining ingredients and  serve.
