INGREDIENTS

500 g Side of fresh undyed smoked haddock
3 Limes; juice of
1 Red chilli; seeded and finely
; chopped
2 tb Shallots; finely chopped
50 ml Dark rum
A peppermill filled with black
; peppercorns

INSTRUCTIONS

Trim haddock and remove the skin. Slice thinly at an angle and lay out on a
serving dish and cover with the remaining ingredients and serve.
