INGREDIENTS

2 tb Olive oil
1/4 c Diced andouille sausage
1/4 c Chopped green onions
1/4 c Chopped celery
2 tb Minced red bell peppers
2 tb Peeled chopped tomatoes
2 ts Minced garlic
1 ts Bayou Blast; see * Note
1 c Coked red kidney beans
Salt; to taste
Freshly-ground black pepper; to taste

INSTRUCTIONS

* Note: See the "Bayou Blast - {Emeril's Creole Seasoning}" recipe which is
included in this collection.
Heat oil in a medium skillet over medium-high heat. When oil is hot, add
sausage, green onions, celery, bell peppers, tomatoes, garlic and Bayou
Blast; saute 2 minutes. Stir in beans, salt, and 3 turns of pepper; saute 1
minute more. This recipe yields about 2 cups of relish.
