INGREDIENTS

3 3/4 lb Red cabbage
Cooking spray
2 c Onions; coarsely chopped
1/2 ts Garlic; minced
1 md Granny Smith apple; peeled and cored
1/2 c Red wine vinegar
1/2 c Water
1 tb Caraway seed
6 tb Brown sugar

Cut away and discard the core of the cabbage. Cut the cabbage into 1/4-inch
slices. Cut the slices into bite-sized pieces.  Saute the onion and garlic
in cooking spray until the onion is wilted. Add the cabbage and cook for
about 5 minutes. Meanwhile, cut the apple into quarters. Cut the quarters
crosswise into very thin slices. There should be about 2 cups. Add the
apple slices, vinegar, water, caraway and brown sugar to the cabbage. Stir.
Cover and cook for 1 1/2 hours, or until the cabbage is quite tender.
