INGREDIENTS

8 Salmon Steaks
1/2 c Ancho chile powder
2 ts Ground cumin
2 tb Brown sugar
1 ts Cinnamon
1/2 c Olive oil
Kosher salt and freshly ground pepper
Preheat grill to medium high.

INSTRUCTIONS

Combine the ancho chile powder, cumin, sugar, cinnamon and olive oil in a
small bowl and season with salt and pepper. Coat salmon with the mixture on
one side only. Grill, pepper side down, until a crust forms, about 2
minutes. Turn the steaks and cook for 5 more minutes, for medium doneness.
