Red-plum Spice Cake

INGREDIENTS

1 c Red plums, drained chop
plums into quarters
reserve liquid
2 c Flour
2 t Baking powder
1/2 t Salt
1/2 t Baking soda
1 t Cinnamon
1 t Nutmeg
1/2 t Cloves
1/2 c Shortening
1 c Sugar
2 Eggs, well beaten
1/2 c Red plum liquid
1/2 c Chopped nuts, optional

INSTRUCTIONS

Sift flour and dry ingredients together. Cream shortening with sugar;
add eggs and beat thoroughly. Add dry ingredients and beat well. Fold
in plums, plum liquid and nuts. Pour into cake pan approximately
7x11-inches. Bake at 375    degrees for about 35    minutes.  Cream
Cheese Frosting: Beat 3 ounces cream cheese, softened. Add 2  teaspoons
plum liquid and 1-1/2 cups powdered sugar.  Scanned, Busted & Proofed
