Red Soup

INGREDIENTS

10 c Water
2 c Red lentils
3 Red potatoes; chopped
1 Red beet; chopped fine
1 Red onion; chopped
1 Carrot
2 Cloves garlic; minced
1/2 ts Crushed red chili peppers
1 tb Dill weed
1 Lemon ; juice of
1/2 c Red miso
1/2 c Veggie juice; (organic)

INSTRUCTIONS

Bring water and lentils to a boil. Scrub but don't peel veggies before
chopping; buy organic veggies when possible. Add potatoes, beet, onion,
carrot, garlic, peppers and dill. Simmer for 20 minutes or till potatoes
are tender. Mash miso and juices together and add after removing the soup
from heat and just before serving.
