INSTRUCTIONS
1. Wipe chicken with a damp cloth; then, with a cleaver, chop, bones and
all, in 2-inch sections. Place in a heavy saucepan.
2. Boil water and pour over chicken. Bring to a boil again; then simmer,
covered, 30 minutes.
3. Meanwhile slice mushrooms, bamboo shoots and water chestnuts. Add to
chicken, along with soy sauce, salt and pepper; and simmer, covered, 30
minutes more.
