INSTRUCTIONS
Place the rhubarb, orange rind, juice and sugar in a large pan and simmer
gently until tender. Meanwhile mix together the almonds, sugar and Ground
Coriander. Place the rhubarb in 4 ramekin dishes and top with the almond
mixture. Place the dishes under a hot grill until the topping is brown.
Watch carefully as this will only take a matter of minutes.
