INGREDIENTS

1 c Frozen mixed vegetables
1 c Cooked brown rice
(or other grain)
1/2 c Cooked beans
Tamari or soy sauce or salsa; to taste
OR 1 tsp; butter

INSTRUCTIONS

MAKES 1 SERVING. VEGAN
Place vegetables in lidded, microwaveable container. Cover lightly and
microwave until desired doneness, 3 to 4 minutes. Stir in rice and beans.
Top with tamari, soy sauce, salsa or butter. Store in refrigerator until
lunchtime. Reheat by microwaving I to 2 minutes. Serve with sliced apple
for dessert. Makes 1 serving.
