INGREDIENTS

2 tb Butter
2 tb Chopped scallion
1 Green pepper, coarsely chopped
1 c Carolina rice
1 ts Salt
1 pn Saffron
1 c Consomme
2 c Boiling water
1 In a large saucepan, heat butter. Add scallion and
Pepper Cook until browned. Add rice and cook, stirring
Constantly, until rice is well coated with butter.
2 Add salt, saffron, consomme, and water. Bring to a
Boil Cover and simmer for 15 minutes, or until rice
Has absorbed all the liquid. Serve hot.
