INGREDIENTS

2 c Rice stick noodles; soaked in hot water
1 c Snap peas; blanched
1 c Snow peas; blanched
8 Thai basil leaves chiffonade
1 c Julienned red bell pepper
Juice of 1 lime
Brown Butter Vinaigrette; see * Note
Salt; to taste
Freshly-ground black pepper; to taste

INSTRUCTIONS

* Note: See the "Lemon Grass Caper Brown Butter Vinaigrette" recipe which
is included in this collection.
In a large bowl, toss everything together with the vinaigrette. Season and
taste. This recipe yields 4 servings.
