Roast Chicken with Barbecue Sauce

INGREDIENTS

2 Whole chickens
2 tb Lime juice; (30 ml)
Salt to taste
1 tb Orange juice; (15 ml)
1 ts White pepper powder; (5 g)
3 tb Oil; (15 ml)
2 tb Butter; (30 g)
1/4 c Mirepoix; (carrot, onion,
; leeks chopped fine)
2 Bay leaves
1 ts Black peppercorns; (5 g)
200 g Tomatoes; chopped fine
1 tb Garlic; (15 g)
Chopped fine
Salt to taste
1 ts Peppercorns; (5 g)
1/4 c Cream; (60 ml)

INSTRUCTIONS

FOR THE MARINADE
FOR THE BARBECUE SAUCE
CUT the chicken with skin into two pieces each (to separate the leg piece
and breast piece). Mix all the marinade ingredients and apply to the
chicken. Keep aside for 30 minutes.
To prepare the barbecue sauce: Heat butter in a sauce pan and saute the
mirepoix, bay leaves, peppercorns and chopped tomatoes lightly. Add enough
stock or water and cook till the tomato is fully mashed. Strain the
mixture. Heat butter in a pan. Saute garlic and tomato puree. Add seasoning
and finish with cream. Roast the chicken in a microwave oven till done.
Serve the hot roasted chicken on the hot sizzler tawa, with the sauce
poured over, along with grilled potato, tomato and cabbage rolls.
