Ingredients:
1 Pound(s) Black beans
3 Quart(s) Water
3 Onions, chopped
2 Green peppers, cut in strips
5 Cloves garlic, minced
2 Bay leaves
1 Teaspoon(s) Oregano
2 Teaspoon(s) Salt
1/2 Teaspoon(s) Pepper
1 Cup(s) scant olive oil
Salt & pepper to taste, Salt & pepper to taste
Directions:
After washing beans thoroughly, soak beans overnight. Next day, boil
beans in same water used for soaking. Add salt & pepper. Pour olive
oil in a frying pan & saute onions & peppers until limp, not brown.
Add garlic, bay leaves & oregano. Cook for 5 minutes & add to black
beans. Cook until beans are very tender. Serve over white rice & top
