Ingredients:
1 1/4 Cup(s) Sugar
2/3 Cup(s) Land O Lakes butter, melted
1/4 Cup(s) Buttermilk
2 Eggs
1 Teaspoon(s) Vanilla
3 Medium, ripe bananas mashed
2 Cup(s) All-Purpose Flour
3/4 Teaspoon(s) Baking soda
1/8 Teaspoon(s) Salt
1 Cup(s) Fresh or frozen blueberries
Powdered sugar, if desired
Directions:
Heat oven to 350ø. In large mixer bowl combine sugar,
butter,buttermilk, eggs and vanilla. Beat at medium speed, scraping
bowl often,until creamy (1-2 minutes). Add bananas; continue beating
until wellmixed (1 minute). Add flour, baking soda and salt. Beat at
low speeduntil moistened (1-2 minutes). By hand, stir in blueberries.
Spoon intopaper-lined muffin cups. Bake for 25-30 minutes or until
toothpickinserted in center comes out clean. Remove from pan. Cool.
Just beforeserving, sprinkle tops of cakes with powdered sugar. Yields
20 snackcakes.NOTE: 1 teaspoon lemon juice or vinegar plus enough milk
to equal 1/4cup can be substituted for the 1/4 cup buttermilk.LAND O
