Ingredients:

300 Double cream, 1/2 pint
125 Gram(s) Unsalted Butter, Cut Into

125 Bourbon, 4fl oz
Directions:
Place the sugar into the pan over a moderate heat and allow the sugar
tocaramelise.Pour in the cream gradually and reduce the heat, add the
butter, stirconstantly to ensure each piece of butter is incorporated
into thesauce.Add the bourbon to taste and the roughly chopped, toasted
pecans.Notes Serve the sauce with a steamed sponge pudding, chocolate
