INSTRUCTIONS
In large pot of boiling salted water, cook pasta for 8-10 minutes or
until tender but firm. Drain well and return to pot.
Meanwhile, in large skillet, heat 2 tb of the oil over medium heat;
cook onion, garlic, thyme and oregano, stirring occasionally, for
about 5 minutes or until onions are softened.
Add to pasta along with remaining oil, spinach, stock, lemon juice,
salt and pepper; toss to coat well. Cook over low heat for about 4
minutes or until spinach is wilted. Stir in cottage cheese.
