Fermented Banana Bread-Adapted

INGREDIENTS

1 3/4 c Whole wheat flour
2/3 c Sugar; or a little less
2 ts Baking powder
1/2 ts Baking soda
1/4 ts Salt
1 c Mashed bananas; about 3
1/4 c Soft margarine
2 tb Milk
1 Egg
2 Egg whites
1/4 c Chopped walnuts; optional

INSTRUCTIONS

Preheat oven to 350 degrees. Mix together 1 cup flour, sugar, baking
powder, baking soda and salt. Add bananas, margarine, and milk. Beat with
an electric mixer on low till blended, then on high for 2 mins. Add egg,
egg whites and remaining flour and beat until blended. Add walnuts if
using. Pour into a greased 8"x4"x2" loaf pan. Bake 55-60 mins. or until
test done with a toothpick. Cool in pan for 10 mins., remove from pan and
cool completely.
Let bananas go completely black, just before they go moldy. I make this in
2 smaller bread pans. Formatted in Mastercook by Carol
