Festive Eggnog Cake

INGREDIENTS

1 pk (18-1/2 oz.) yellow cake mix
1 c Dairy case or canned eggnog; (liquid)
1/4 c Vegetable oil
3 lg Eggs
2 TBPS rum or 1 tsp. rum extract
1/4 ts Ground nutmeg
Cream-cheese frosting; (recipe follows)

INSTRUCTIONS

Preheat oven to 350 degrees. In large mixer bowl, combine cake mix, eggnog,
oil, eggs, rum and nutmeg. Beat at medium speed 3 minutes. Pour into 3
well-greased and floured 8 inch square pans. Bake 20 minutes, or until
toothpick comes out clean. Cool in pans on rack 10 minutes. Remove cakes
from pans; cool completely on racks. Prepare cream-cheese frosting; use to
fill and frost cake on serving plate. Cream Cheese Frosting: In small mixer
bowl, beat one 8-oz. pkg. cream cheese, softened until fluffy. Gradually
beat in one 1-lb. pkg. confectioners' sugar, sifted. Add 1-1/2 tsp. eggnog,
1/1 tsp. at a time, and a few drops of yellow cake coloring.
