2 c Cooked Black beans -or-
1 cn (15-oz) Black beans; drained and rinsed
1 Sweet green pepper; diced
1 Sweet red pepper; diced
1/2 c Sliced red onions
3 Scallions; minced
1 Lime; juice of
1 tb Snipped fresh cilantro
1 ts Olive **l
1 sm Jalapeno; minced

With summer right around the corner (I live in Florida, Summer is always
right around the corner), I thought I would share my favorite cold tortilla
filling.
In a large bowl, combine the beans, green and red peppers, onions,
scallions, lime juice, cilantro, oil and jalapeno.  Serve immediately or
chill until ready to serve. Servings: 4
Cal: 170, Fat: 1.6g (8.4% of fat) this is with the oil, Fiber: 5.2g.
We just stuff this in tortillas with a little fat free sour cream and
enjoy.
