INSTRUCTIONS
The chitterlings can be purchased in central-area meat markets, Prepare
chitterlings as in previous recipe. Cut into 3-inch pieces and dip in egg
wash (2 eggs whipped with 4 tablespoons water) and then into cracker
crumbs. Deep-fry or pan-fry until golden brown.
