1/2 c Sliced green onions; (scallions)
1/2 c Peeled; seeded and chopped cucumber
1 Clove garlic; minced
2 tb Chopped cilantro; or 2 tsp. dried cilantro
2 tb Olive oil
1 tb Red or white wine vinegar
1 ts Salt
Cayenne pepper to taste

INSTRUCTIONS

Prepare pasta according to package directions; drain. Combine pasta with
remaining ingredients. Cover and chill at least 1 hour. Each serving
provides: 127 Calories; 3.2 g Protein; 19.1 g Carbohydrates;
4.4    clove garlic; minced Fat; 0 mg Cholesterol; 312 mg Sodium.
