Green Chili Rice

Dairy Rice, Casseroles 8 Servings

INGREDIENTS

4 c Cooked rice
1 Stick butter
1 c Onion, chopped
1/2 pt Cottage cheese
1/2 pt Sour cream
Salt and pepper to taste
2 1/2 c Coby/Jack cheese, grated
2 Green (4 oz ea) chiles, drained and chopped
1 Jalapeno pepper, chopped fine

INSTRUCTIONS

Saute onion in butter. Add onion to cottage cheese, sour cream and then add
rice. Place 1/2 of the mixture in a casserole dish. Sprinkle on green
chilies, jalanenos and grated coby/jack cheese. Add rest of rice and top
with another layer of the cheese and chilies. Bake at 350 F. for 20 to 30
minutes until hot and cheese is melted.
