So many times I’ve seen men, particularly younger guys, act as if real leadership is shown in correcting others. That’s why young men’s sermons often scold. What they haven’t figured out is that you can often accomplish more by encouragement. There are times to scold. But 80 to 90 percent of what you hope to correct can be accomplished through encouragement. If you look back at your life and consider who influenced you the most, you will probably find that it’s the people who believed in you.

But we would do well to think of ourselves in the same way we used to think about the lost people of the mission field. We have become the new heathen. We Americans are the ones now in thrall to primitive superstitions, such as believing in the power of positive thinking and having faith in ourselves. We are the ones held back by a materialistic worldview that has little conception of the supernatural. We are the ones with brutal customs, such as aborting our infants, neglecting our children, and abandoning and sometimes euthanizing our elders. We have simple, pounding music, and we are uneducated about the realities outside of our tribe. With our limited mind-set, we have trouble grasping the truths of Scripture.

Grilled Eggplant & Lamb Medallion Sandwich with Rosemary Aio

INGREDIENTS

1 Eggplant; about 1 pound, cut into 8 1 inch slices
8 oz Lamb tenderloin; cut into 8 1 ounce medallions
Salt and pepper
Olive oil
1/2 c Prepared or homemade mayonnaise
1 tb Minced garlic
2 tb Finely chopped fresh rosemary
Salt and pepper
2 sl Parmesan Cheese; ( 2" by 1")
Fresh rosemary sprigs
Black pepper for rim

INSTRUCTIONS

Preheat the grill.
For Rosemary Aioli: In mixing bowl, combine the mayonnaise, garlic and
rosemary and blend until incorporated. Season with salt and pepper. Set
aside.
For eggplant and lamb: Rub each piece lightly with the olive oil to prevent
from sticking to the grill. Season with salt and pepper. On a hot grill,
grill each piece of eggplant for 1 minute on each side. Remove from the
grill and set aside. Place the lamb medallions on the grill and cook until
medium rare, about 1-2 minutes on each side. Remove from the grill and set
aside.
To assemble, place a small pool of the aioli in the center of the plate.
Alternate layering the eggplant and lamb medallions four times. Top with a
slice of Parmesan Cheese. Drizzle the remaining aioli over top and garnish
with flaming rosemary sprig and black pepper.
