Halibut with Braised Vegetables

INGREDIENTS

2 c Onions — chopped
1/2 c Tomato juice
1/2 c Apple juice
2 Cloves garlic — chopped
Fine
1 c Bell peppers — chopped
1 c Corn — frozen
2 tb Lemon juice — at room
Temperature
1 tb Mustard — prepared
1/4 ts Salt
1/4 ts Black pepper
1 1/2 lb Fish fillets

INSTRUCTIONS

Preheat oven at broil.  Prepare a broiler pan rack lined with foil with
cooking spray. Prepare a loaf pan l with cooking spray.  Heat onions,
tomato juice, apple juice, and garlic to boiling in 2 quart saucepan;
reduce heat to medium.  Cook uncovered about 10 minutes, stirring
occasionally, until most of the liquid has evaporated.  Stir in remaining
ingredients except fillets.  Cook uncovered 6 to 8 minutes or until corn is
tender.  Cover and remove from heat.  Place fillets on rack in broiler pan.
Broil with tops about 4" from heat about 10 minutes or until fillets flake
easily with fork.
