Halibut with Noodles in Ginger Soy Sauce

INGREDIENTS

5 oz Uncooked noodles or spinach noodles, 2 1/2 cups
1/2 ts Coriander
1/4 ts Pepper
1/8 ts Garlic powder
1 lb Fresh or frozen halibut fillets, or steaks, thawed
1 tb Chopped fresh cilantro, or parsley
1 tb Chopped green onions
1/2 ts Grated ginger root
1/2 ts Sugar
1 tb Rice vinegar
1 tb Soy sauce, or Lite Soy sauce

INSTRUCTIONS

In small bowl, combine coriander, pepper and garlic powder. Sprinkle half
of mixutre on one side of halibut. In small bowl, combine cilantro, onions,
gingerroot, sugar, rice vinegar and soy sauce. Mix well. Cook noodles in
large saucepan to desired doneness as directed on pkg. Drain. Return to
saucepan. Cover and keep warm. Meanwhile, heat nonstick skillet to Medium
High heat until hot add fish, seasoned side down, in hot skillet. Cook 2-4
minutes. Sprinkle rest of coriander mixture on top side of fish. Turn fish
and cook an additional 2-4 minutes, or until fish flakes easily with fork.
Toss cooked noodles with cilantro mixture. Serve noodles with fish. MC

Serving Ideas : Good served with Lemony Asparagus Salad
NOTES : Al doesn't like Spinach noodles, so next time try with regular wide
noodles. If using Halibut Steaks, may need to cover and steam for an extra
minute or two to cook through. Per serving: 270 calories, 4 g. fat, 6% CFF,
75    mg. cholesterol
