INGREDIENTS

4 lg Eggs
1 c Oil
1 1/2 c Sugar
2 ts Vailla
1 tb Baking powder
1/2 ts Salt
4 c Flour
1 pn Lemon rind

INSTRUCTIONS

1.Beat eggs, then add remaining ingredients, beating well after each
addition.
2.Roll out dough and cut out circles. (I use the rimmed end of a drinking
glass, dipped in flour each time.)
3.Put one teaspoon of filling in center.
4.Fold over edges in three sections.
5.Bake at 350F for about 20 min.
